WET MILLING PROCESS AT CASCAJAL
Cascajal Wet Milling Facility was established with the aim of contributing to the environment and preventing pollution in the community. In the past, coffee processing took place in the mountains, causing harm to the local flora and fauna. Today, coffee producers bring their harvest to our wet milling facility, strategically located, and equipped with multiple functions to address pollution.
The facility has the capacity to process 8,000 quintals of ripe coffee beans daily. It features a well-designed structure with separate reception areas for different coffee varieties and certifications. This ensures efficient processing and quality control throughout the production process.

AGUAS MIELES: FROM CONTAMINANT TO FERTILIZER AND METHANE GAS
Beneficio El Cascajal is the only coffee processing facility in the entire country of Guatemala that has honey water cleaning reactors, which involve the recirculation process of honey water for grass and staple crop cultivation. This project, which addresses the need for wastewater treatment, was introduced and presented by the Embassy of the Netherlands. It enables the production of methane gas, which is utilized as fuel for coffee dryers, fully maximizing its benefits.

In addition to being one of the most important commodities for the economies of coffee-producing countries, coffee plays a tremendously significant role in the social sphere. Over 25 million people living in the tropics depend on coffee as a means of livelihood, making it the economic backbone of many nations and the second most traded commodity in the global market, following oil.
The importance of Guatemalan coffee has evolved over the years. Since the first commercial production of 383 60-kilogram sacks sent to Europe in 1859, coffee has shaped Guatemala's economic landscape, positioning itself as the country's ecological currency.
Derived from the gardens of a Jesuit monastery, coffee was transformed by those pioneering producers and revolutionary inventors into the most powerful driver of the economy. Through booms and busts, volcanic eruptions, earthquakes, isolation, and challenges, Guatemala has managed to establish an unparalleled level of quality and regional varieties of coffee worldwide.
Furthermore, coffee is essential for generating employment, accounting for 42% of the national workforce within the coffee industry. It also constitutes one of the primary contributors to maintaining social and political stability in the country. Under normal conditions, employment in the coffee sector represents around 6% of the Economically Active Population (EAP). Additionally, the investment generated by the coffee industry fosters the development of microenterprises, which help reduce rural-urban migration and the associated problems.
